ROASTED TOMATO SAUCE

This tomato sauce is my all time favorite sauce to make. I came up with the original recipe in 2018, which didn’t require roasting the tomatoes and also didn’t require frying the meat. In 2021, I made a few changes to the recipe, by deep frying the beef and roasting the tomatoes, tatashe, ginger and garlic. These changes took this sauce to another level and I have not made tomato sauce any other way, since then.

Here is a list of everything I use to make this sauce

  • Red Tomatoes
  • Garlic
  • Ginger
  • Tatashe
  • White Onions
  • Green Bell Pepper
  • Oil
  • Bay Leaves
  • Beef and Beef Stock
  • Salt and Seasoning Cubes
  • Thyme, Rosemary, Coriander and Curry Powder
  • Red Scotch Bonnet

To start, you are going to wash your tomatoes, slice and lay them onto an oven tray, alongside with the scotch bonnet, tatashe, garlic and ginger. If you have fresh rosemary, add it also.

After roasting, you should remove everything and blend without adding water. You should have a thick and dark red kinda mixture. Some tomatoes will burn during the roasting, which will cause the dark color, just as it is in this photo.

I prefer to use a cast iron pot to make this sauce, but you can use your own favorite pot type. Start with some oil in the pot, throw in the rosemary, thyme and bay leaves. Then, start frying the beef.

Then add the onions and green pepper at the same time

You should continue frying on low heat for another 10 minutes. Do not let the onions get burnt. Pour the tomato mixture and give it a good stir.

Add the curry powder, coriander powder, salt and seasoning powder and give it a good stir. Turn down the heat, because it will start to get messy. An apron always saves the day here😂. Just mix it very well and cover the pot for another 20 minutes. You’ll be stirring it every 5 minutes until the 20 minutes. This sauce goes well with rice or spaghetti. These are photos of different times I have used this sauce and it is always amazing.
