Early this week, I had my Instagram followers drooling over this special meal. The last time I ate this was definitely while growing up as a kid in Cameroon. You have to know that, the beans they grow in Cameroon is very different from the ones we grow here in Nigeria. In Cameroon, they grow navy beans, pinto beans, red beans, black turtle beans and their other relatives. A friend who just returned from Cameroon, brought me some black turtle beans, and you needed to have been there to see the joy all over my face. The recipe for this has been stuck in my head since childhood and I am sharing it with you today.
QUICK CHOCOLATE CAKE RECIPE
This weekend, it is #NigeriaDecides2023 and I’ve chosen to remain indoors until it is all over. This means more cooking, more baking and more experimenting in the kitchen. For the past 4 weeks, I’ve been promising myself chocolate cake, but I’ve been too lazy to keep this promise. Thankfully, my stay-at-home mood has got me bored enough. The recipe to this yummy chocolate cake has been in my phone for 4 months now and am sharing it with you today. Continue reading for ingredients and steps
BURGER BUNS
Hi HF Readers… I’ve been MIA and as usual, I am sorry. There is something I’ve been working on and it’s taking all my time. A reader sent a DM to me last week on my twitter and asked if I could upload an easy recipe for Burger Buns and I said YES. So, here is how to make easy burger buns at home.
ROASTED TOMATO SAUCE
This tomato sauce is my all time favorite sauce to make. I came up with the original recipe in 2018, which didn’t require roasting the tomatoes and also didn’t require frying the meat. In 2021, I made a few changes to the recipe, by deep frying the beef and roasting the tomatoes, tatashe, ginger and garlic. These changes took this sauce to another level and I have not made tomato sauce any other way, since then.
ROASTED BEEF STOCK
Years ago, I learnt that there is magic in meat stock. If you are one of those who still cook with just water, hehehe… my sister what is wrong with you?😂 Let me tell you something_ stock is a much better liquid for your cooking than simple water. From fried rice, to jollof rice or even something as simple as indomie, use stock instead of water and you will see the difference. Am going to show you how I make a good beef stock and I hope you take this to your kitchen.
YUMMY GLUTEN-FREE PANCAKES
Whoop Whoop!💃🏽💃🏽 I finally get to share a pancake recipe for people who are allergic to gluten because of Celiac disease. I remember early in my 300 level in Uni, I’d make a large batch of pancakes for myself and my Neigbor who was gluten intolerant. We’d eat the pancakes for dinner and put some in the fridge for that emergency breakfast right before our 8 o’clock lectures. The pancakes were light, so yummy and she would eat as much as she wanted without any guilt, because obviously they didn’t have any gluten in them.
VEGETABLE WHOLE WHEAT SPAGHETTI
Hello HF Reader🙋🏽♀️
I am back with another yummy recipe, that you’d love. I have been a fan of the Barilla line of Pasta for 6 years now. But since last year, I have been committed to making healthier food choices for myself. A friend introduced me to a brand that makes whole wheat pasta, called “Napolina” and this brand swept me off my feet.
DELICIOUS NIGERIAN MEAT PIE
If you know me well, you’d know that meat pie is the love of my life. I can eat 3 at once_ yes unapologetically. One other reason I love it, is because it is the fastest. There is no need to knead and wait for rise time. It is just straight forward. Here is my recipe for the famous Nigerian meat pie
M&M Banana Bread
I have made Banana Bread so many times. And I can tell you that, the beauty of banana bread is the fact that you can customize it as you like. MILKY CHIN-CHIN
Weekends are always great because, we have enough time to relax and have fun. While the boys are stuck in front of the TV, playing videos games or getting emotional over some stupid football match, the girls could either be at the spa with cucumber slices on their eyes or ( just like me) they could be in the kitchen, making a pile of chin chin for the entire family. Chin chin is a very common snack in Nigeria. With uncountable chin chin recipes out there, mine stands out. This is because of its unique shape, which sometimes confuses people.
